Okay, so I messed this recipe in a major way. But I'm going to post it anyway because it was the first recipe that I ever live streamed on periscope, and I promised I would post the recipe here so people could see it.
The inspiration for this recipe came from my favorite baking show called The Great British Baking Show, in the first episode they make a swiss roll and it's very challenging. So, knowing that I had absolutely no experience making sponge cake, I decided I was going to attempt to flavor it as well. I basically hosted my own baking challenge, but I was alone in my kitchen and only about 80 people were watching live.
Well, I was unexpectedly nervous as I was periscoping for the first time, and I got flustered and forgot to add the powdered sugar at the beginning. I also forgot to set a timer and luckily one viewer tuned in and reminded me. That would have been a horrible mistake.
I decided that I wanted to decorate this swiss roll the way I'd see a few bakers do it, so I chose to pipe a little apple design on the parchment paper before I put the rest of the batter in.
The true test of a properly baked swiss roll is not only a light springy sponge, but also a sponge that rolls tightly and doesn't split. You keep the sponge nice and moist by rolling it tightly with a damp tea towel as it's cooling. You roll it ahead of time so that it retains its shape nicely. That park worked out for me.
The filling I made was a little messy, and I was disappointed with how the sponge turned out. It was a little dense for my taste, I think that I didn't whisk the eggs long enough. Also that damn powdered sugar that I forgot to add probably would have helped. But the decorations really made the swiss roll stand out and I'm very happy with how that turned out.
I had a lot of fun periscoping while I baked, I was very surprised by the response I got and it's something I'll definitely be doing again. It was fun to interact with people while I was baking, and there were even a few fellow bakers watching. They offered me tips as I stressed out about rolling the sponge cake up and we all got to chat about our weekends. I hope you'll join me next time If you didn't catch this one!
You can buy your own apple pie filling from a grocery store, or you can make it yourself. I used a recipe from a blog called . I even had some leftover and I'll be putting it on my yogurt in the morning for the next 3 days. YUM!
