I hope so. Because you're gonna freak when I tell you that you can get creamy, delicious ice cream without using any dairy.
The base of this ice cream is coconut milk, the kind that comes in a can, and cornstarch. That gives you the thickness and creaminess that you're used to getting from eggs and milk. Then you sweeten it up with your choice of sweetener, I used coconut sugar and agave nectar. Pop in some fresh vanilla bean seeds or some vanilla extract and you're good to go!
I've made ice cream once before, a lemon-lavender one that was quite delicious. I searched around the internet for a recipe that was vegan friendly, but most of them involved frozen bananas. That wasn't the kind I was looking for, too healthy. But then I found this awesome base recipe from the kitchn, and tweaked it a little to suit my tastes.
It's smooth, rich and was pretty easy to make. Just make sure you've got an ice cream maker because that thing is gonna do most of the work for you. As with all recipes involving an ice cream maker, make sure you pop the bowl in the freezer the day before you want the ice cream.
