I'm just going to go ahead and say it. I love coffee. I know that makes me the most basic of all basics, but I do. I just love coffee. I love the way it tastes, the way it makes my heart beat and the way it makes my brain snap into focus. I love how holding a warm mug on a cold morning warms my bones and I love the sound ice cubes makes as they clink together in iced coffee.
I love the conversations I've had with people over coffee. Laying in bed with an old boyfriend as we rub sleep from our eyes and sip our morning coffee, getting ready to face the day. Or sitting on the back porch at my parents house, with the sun shining on my face and a newspaper beside me. As an excuse to take a moment away from work, walking down the street with a coworker to grab a fresh cup at a local cafe. Having a friend console me over a latte, as I mourn the loss of whatever relationship is most recent.
It's the ritual, mostly. A relationship formed out of habit. Coffee is like your first boyfriend. He drives you crazy, but he also showed you how it felt to be loved.
We've had our fights. Sometimes we spend so much time together that it borders on codependency. He blames me for always taking, never giving anything in return. So I swear I'm leaving and that I won't be back. But I always am. And he's waiting for me each morning. Forgiving and loving. The perfect partner. We don't need eachother, but we do.
I drink it black. It feels more grown up that way, and people take our relationship more seriously. But sometimes you have to dress up your bad boy to impress you parents. So occasionally I sprinkle in some sugar or add in almond based creamers.
This week is Popsicle Week, a really wonderful time of year when all my blogger friends and I join forces and make frozen treats. It was started by Billy over at Wit & Vinegar (one of my favorite food blogs btw, his writing is hilarious). It's a damn revelation, especially during this heat wave that Los Angeles is putting me through. I wanted to impress my friends, but also I just super love coffee and I wanted to make myself happy so I took two of my favorite things and put them together. That's how I made these lavender latte popsicles and also how you can make them.
Because you deserve to have frozen coffee, and you also deserve to eat to flowers.
Lavender Latte Popsicles
- 6 cups coffee ( cold brew or regular, chilled)
- 1/2 cup your choice milk ( I used a coconut almond blend)
- 1/8 cup dried lavender buds (food grade)
- 1 tsp vanilla (optional)
- sugar (to taste)
In a small sauce pan, simmer milk and lavender buds together over low heat for 5-10 minutes. Stirring frequently to prevent milk from burning.
Remove from heat and stir in vanilla, if it feels right to you. I prefer my coffee without sweetener normally, but there's just something about the way vanilla and lavender go together that makes this chick wild. Strain the lavender buds out and let the mixture cool.
Add sugar to coffee if you want, and then fill your popsicle molds 3/4 of the way full with your desired ratio of coffee to milk. This is all up to you, and all depends on your personal preference.
Put the tops on your popsicles, or stick popsicle sticks in the molds, and then place in the freezer for a minimum of 4 hours, but preferably overnight. Enjoy for breakfast and bask in the truly remarkable feeling that frozen caffeine gives you.
